About the Wusthof Two-Stage Asian Manual Knife Sharpener
The Wusthof Two-Stage Asian Manual Knife Sharpener is designed to sharpen your Santoku, Nakiri or other Asian style knives that require a finer edge than standard European or American cutlery.
To sharpen a dull knife pull it through the course stage at a 90° angle with moderate pressure until a new edge or set. Once an edge is set hone it with the fine stage with lighter pressure. You may keep a sharp knife in peak condition by honing it in the fine stage every second use.
